Joe's Pasta House Serves Italian Food With A New Mexico Twist

The husband and wife team of Joe and KC Guzzardi have a total of sixty plus years' experience in the food and beverage and hospitality industries between them. Over the years, they have acquired many many recipes, loyal customers in Rio Rancho, New Mexico, and marketing smarts that they are happy to share with other small businesses.

"We are considered a traditional red sauce Italian restaurant featuring house made red sauce, alfredo sauce and many recipes handed down to Joe in his Sicilian family," Owner and VP KC Guzzardi said. "We have an extensive 5 page menu that also includes Northern Italian recipes, sautee dishes. Many come with a choice of natural chicken, veal or wild caught gulf coast shrimp, as well as hand-cut, all natural steaks and chops,"

Joe Guzzardi began his life and work in New York City, and many of his recipes come from his immigrant ancestors.

"Joe grew up in his Nonna's kitchen learning family recipes, and in the bakery business," KC Guzzardi said. "His father was a baker and owned two bakeries back in NYC. When he was of age to work for someone other than family he started out as a dishwasher, went to the Culinary Institute of America NYC for culinary training and worked in several fine New York establishments as a server and line-cook."

He came out to New Mexico over thirty years ago and earned a degree from UNM's Anderson School of Business. KC Guzzardi too has worked in restaurants, catering, and bartending as well as training and management in the hospitality industry. What it comes down to is making visitors feel at home and serving freshly made, delicious food.

Guests feel like they are being welcomed into a home for a traditional Italian dinner.

"We are a family owned and operated restaurant striving to consistently provide fresh, high quality food at price that is fair to our guests and sustainable for our business," Guzzardi said. "We have a very low turnover of staff members and most have been with us for many years. They win awards for their service, being very well know for continually giving great service and preparing fresh, delicious food."

All sauces are made from scratch every day and food is cooked fresh when ordered. Seasonings and ingredients can be added or removed according to personal tastes. Guzzardi recommends the Romano sauce with white wine, garlic and Romano cheese, the Saltimbocca which is a creamy pesto sauce and the Francesse which has egg battered in a light white wine lemon sauce. Some dishes have a New Mexico twist, like the Southwestern Fettuccine and the Green Chile Chicken Ravioli, both made with certified NM Hatch Harvest Green Chile.
