Andrea Schulte Brings New Mexico Hand Made, Baked Fresh Pies

Andrea Schulte always knew she wanted to open her own bakery. Her aim was to create a retail bakery experience in which everything was made in-house, from scratch, utilizing only the best ingredients she could find. After many years of education, and as many degrees later, Schulte finally fulfilled her wish and opened the New Mexico Pie Company.

"I've been a Pastry Chef and in the industry for 16 years," says Schulte. "When I went to pastry school at Johnson & Wales University, I always knew that one of my goals after gaining much experience was to open my own business."

Schulte's experience includes some impressive names such as Disney World, The Scottsdale Princess Resort, The Ranchers Club, Hyatt Tamaya Resort, Marriott Pyramid Hotel, The St. James Tearoom, and a Stage at The French Laundry as well as working in catering, wedding cakes, and as a private chef. When it came to deciding on a concept for her new business, she utilized her knowledge of the industry to create the perfect idea. "I decided on a pie themed bakery because everyone loves pie!" she exclaimed.

In order to separate herself from other bakeries in the area, Schulte took a focus on using only the freshest, highest quality ingredients she could locally source. "My unique theme and menu items such as Caramel Apple Green Chile Pie, Chocolate Pecan Red Chile Pie and Green Chile Bacon Quiche are specific to my company," she detailed.

"We use locally sourced ingredients whenever possible, too." The menu is exploding with creative, flavorful options, such as a Peach Cobbler Pie made with locally grown peaches, which can be found on the current August Menu. "We also have some other unique pies like Cherry Rhubarb and Lemon Lavender Chess this month," she tells us.

To keep the experience fresh across the board, Schulte ensures everything from the pie crust to the toppings is made with love, care, and attention to detail. "Our Pie Crust is rich and buttery and it has a hearty texture that compliments the fruits as well as our quiches so very well," she states.

"It's amazing because we use all unbleached flour as well as pure butter, cream cheese and some whole wheat flour." Even the fruit pies available from the New Mexico Pie Company place a heavy focus on the pure rich and tart flavors of the fruit. "None of them are overly sweet," Schulte says. "We make hand-made Pop Tarts, too. We call them Pie Tarts. They have amazing flaky dough and cooked from scratch fruit fillings."
